Peanut Butter Brownie Trifle

Bake Believe Peanut Butter Brownie Trifle

Ingredients:

For the brownies

  • 2 cups Bake Believe® Semi-Sweet Baking Chips
  • 1 ½ cups almond flour
  • 1 teaspoon baking powder
  • 1 cup salted butter
  • ½ cup monkfruit granulated sweetener
  • 5 eggs, room temperature
  • 1 teaspoon vanilla

For the peanut butter layer

  • 2 cups heavy cream
  • 3 tablespoons honey, divided
  • 1 ½ cup peanut butter
  • 2 (8-ounce) cartons of cream cheese, softened
  • 4 firm bananas, cut into ¼ inch rounds

Instructions

For the Brownies

  1. Preheat oven to 350F. Line a 9×13-inch baking pan with parchment paper and set aside. Combine almond flour and baking powder and set aside.
  2. Place baking chips, butter and monkfruit sweetener in a large, microwave-safe bowl. Melt in the microwave on low power, stirring every 30 seconds until melted and smooth. Thoroughly mix in the eggs and vanilla. Add the almond flour mixture and continue mixing until fully incorporated.
  3. Transfer batter to prepared pan and bake for 30-35 minutes or until cooked-through in the center. Remove from oven and let cool for at least 20 minutes. Cut brownies into 2-inch squares. Reserve all brownies crumbs for garnishing later.

For the peanut better layer

  1. Combine heavy cream and 1 ½ tablespoons honey in a mixing bowl. Whip with an electric mixer to medium peaks and set aside.
  2. In a sperate mixing bowl, combine peanut butter, cream cheese and remaining 1 ½ tablespoons of honey. Beat with an electric mixer until fully combine and smooth, about 2 to 3 minutes. Fold in 1 ½ cups of whipped cream into the peanut butter mixture. Reserve remaining whipped cream for topping.

Assembly

  1. Place half of the brownies snugly into the bottom of a trifle dish. Spread half of the peanut butter mixture in an even layer on top. Press 2 of the cut bananas into the peanut butter mixture. Repeat to create each layer again. Top Trifle with reserved whipped cream, then sprinkle with brownies crumbs.
  2. Transfer to refrigerator for at least 2 hours before serving and enjoy!
