No-Bake Lemon Bars

Ingredients:

For the Crust:

  • 1 ½ cups almond flour
  • 3 tablespoons Confectioners Swerve
  • 3 tablespoons melted unsalted butter, melted
  • ¼ teaspoon salt

For the Filling:

  • 1 ¼ cups Bake Believe® White Melting Wafers
  • 1 cup lemon juice
  • 2 teaspoons lemon zest
  • 1 ¼ cups water
  • 1 cup Swerve
  • ½ teaspoon turmeric or yellow food coloring, as desired
  • 2 envelopes (14 grams) unflavored gelatin
  • 2 tablespoons unsalted butter
  • 2 tablespoons Confectioners Swerve

Instructions:

  1. Line an 8-inch x 8-inch baking dish with parchment paper, so that some of the paper hangs over the edge to easily remove the bars when they’re done.
  2. In a medium bowl, stir together all the crust ingredients until well combined.
  3. Firmly press the crust ingredients into the prepared baking dish, pushing them about ½-inch up the side of the dish.
  4. Place the baking dish in the refrigerator while you prepare the filling.
  5. In a medium saucepan, combine the lemon juice, lemon zest, water, Swerve, and turmeric or food coloring.
  6. Sprinkle the gelatin on top of the lemon juice mixture in a thin, even layer.
  7. Allow the gelatin to bloom for 10 minutes, then place the saucepan over a medium heat.
  8. Cook, whisking frequently, until the mixture steams and begins to simmer.
  9. Remove from the heat, add the white melting wafers and 3 tablespoons butter
  10. Whisk until the melting wafers and butter melt completely.
  11. Set aside for 20 minutes to cool.
  12. Pour the slightly cooled lemon mixture over the chilled crust.
  13. Cover and chill in the refrigerator until the filling has set, about 2 hours.
  14. Place the Confectioners Swerve in a strainer.
  15. Dust the top of the lemon bars with the Confectioners Serve by tapping the strainer.
  16. Cut into 9 bars, then serve. Store extra servings in an airtight container in the refrigerator.
