Bake Believe’s Keto Heaven in a Pan

Ingredients: 

For the Crust: 
  • ½ cup very finely chopped pecans (fine like almond flour or slightly more coarse) 
  • 1 ½ cups almond flour 
  • 2 tablespoons Confectioners Swerve 
  • 5 tablespoons unsalted butter, melted 
  • ½ teaspoon salt 
For the Cream Cheese Layer: 
  • 8 ounces cream cheese, softened 
  • ¼ cup heavy cream 
  • 1 cup Confectioners Swerve 
  • ½ teaspoon vanilla 
For the Chocolate Layer: 
For the Whipped Cream Layer: 

 Instructions: 

  1.  Preheat oven to 350°F. 
  2. Place all of the ingredients for the crust in a medium mixing bowl and mix well. Firmly press evenly into a 9-inch x 9-inch casserole dish or baking pan. 
  3. Bake until the edges begin to brown, about 15 minutes. Set aside in the refrigerator to cool. 
  4. For the cream cheese layer, beat the cream cheese in a large bowl until light and fluffy. Add the remaining ingredients for the cream cheese layer and beat until you form firm peaks, about 5 minutes. 
  5. When the crust has completely cooled, spread the cream cheese layer over the crust. Place in the refrigerator. 
  6. To make the chocolate layer, whisk together the dark baking chips, heavy cream, Confectioners Swerve, and xanthan gum in a medium saucepan.   
  7. Place over medium heat and whisk until the chocolate melts and the mixture thickens.  
  8. Remove from the heat, then whisk in the butter and vanilla. Cool the mixture for 15 minutes, stirring occasionally. 
  9. Spread the chocolate mixture over the cream cheese layer. Cover with plastic, pressing it onto the chocolate layer. Chill in the refrigerator for 1 hour. 
  10. In a chilled bowl, beat together the ingredients for the whipped cream layer until stiff peaks form. Spread over the chocolate layer. 
  11. Sprinkle the chopped dark baking chips over the whipped cream and serve. 
  12. If it is too soft when serving, place in the freezer for 15 minutes and try again. Enjoy!
