Honey Walnut & Date Truffles

  1. Place dates, honey and olive oil into a food processor. Process until mixture is smooth and sticky, about 2 to 3 minutes. Scrape the sides, then add walnuts and vanilla and process for 1 minute more.
  2. Scoop out about tablespoon of the mixture and roll into truffles. Transfer to freezer for 15 minutes.
  3. Melt chocolate chips and coconut oil together using a double boiler or in the microwave on low power, stirring every 30 seconds until melted and smooth.
  4. Dip chilled truffles into melted chocolate. Transfer each to a parchment-lined baking sheet. Sprinkle with flake salt and chopped walnuts. Refrigerate until set, about 15 minutes.
