  1. Line an 8x4x2 inch loaf pan with plastic wrap.
  2. Place melting wafers and cashew butter in a saucepan. Cook over low heat, stirring constantly until melted and smooth. Remove from heat and stir in vanilla and ginger.
  3. Pour into prepared pan and smooth the top with a spatula. Sprinkle cashews on top in an even layer and gently press into the mixture. Transfer to refrigerator until set, about 90 minutes. Cut into squares to serve and enjoy! Store in an airtight container.
