Cream Cheese Truffles

  1. Line a baking sheet with parchment paper; set aside.
  1. Place chocolate chips in a mixer bowl. Heat heavy cream to a simmer, then pour over chocolate chips. Let rest for 2 minutes, then stir by hand until incorporated and thick.
  1. Add cream cheese, then beat with an electric mixer on medium-high speed until incorporated and fluffy, about 1 minute. Cover and refrigerate for 1 hour.
  1. Scoop about 1 rounded tablespoon of mixture onto a parchment lined baking sheet; Repeat with remaining chocolate mixture. Return to refrigerator for 30 minutes, then roll each into a ball.
  1. Place cocoa powder into a shallow bowl. Roll each truffle into cocoa powder. Refrigerate until ready to serve and enjoy!
