Chocolate-Coconut Energy Balls

  • ¼ cup Bake Believe® Dark Chocolate Baking Chips
  • ⅔ cup unsweetened coconut flakes, and extra for coating
  • ¼ cup unsweetened almond butter
  • 1 tablespoon cocoa powder
  • Pinch of salt
  • 1 ½ tablespoon Confectioners Swerve
  • ¼ teaspoon coconut oil


  1. Pulse dark chips in a processor until finely chopped and set aside in a bowl.
  2. Add coconut flakes to the processor and finely chop.
  3. Add almond butter, cocoa powder, and salt.
  4. Add Confectioners Swerve and process until it all comes together.
  5. Transfer to a bowl and mix in the finely chopped chocolate chips.
  6. Divide into 6 portions, then roll into balls and place in the freezer for 5 minutes.
  7. Roll each ball in your hands briefly to warm the surface, then coat in coconut flakes.
  8. Chill for 15 minutes in the refrigerator.
  9. Enjoy immediately or store for up to 3 days in an airtight container in the refrigerator.
