  1. Preheat oven to 300F. Line a baking sheet with parchment paper; transfer coconut on top. Bake for 8 to 10 minutes or until toasted. Set aside to cool slightly.
  2. Combine coconut cream, honey, and vanilla. Add toasted coconut at mix to combine. Melt chocolate chips using a double boiler or in the microwave on low power, stirring every 30 seconds until melted and smooth. Pour melted chocolate into coconut mixture, stir until fully combined.
  3. Mold the mixture into 16 squares. Transfer to refrigerator until set, about 2 hours. Store leftovers in an airtight container in the refrigerator.
