Bacon Chocolate Chip Cookies

Ingredients:

  •  ¾ cup Bake Believe® Semi-Sweet Baking Chips
  • 1 ½ cups almond flour
  • ½ teaspoon baking powder
  • ½ teaspoon xanthan gum
  • ¼ teaspoon salt
  • ¾ cup firmly packed Brown Swerve
  • 3 Slices of cooked bacon (chopped. Reserve some for topping)
  • 1 egg
  • 1 stick of melted unsalted butter
  • 1 teaspoon of vanilla

Instructions:

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.
  2. Cook the bacon just until before it gets crispy and chop into small pieces when it cools
  3. Except for some of the chopped bacon reserved for topping, add all the ingredients into a large bowl.
  4. Mix until thickened and divide into 12 balls.
  5. Flatten the balls on the cookie sheet.
  6. Top with remaining chopped bacon.
  7. Bake for 13 minutes.
  8. Allow to cool and enjoy right away or store in an airtight container for up to 3 days in the fridge.
