White Chocolate Peach Bars

White Chocolate Peach Bars

Ingredients:

  • 1 cup Bake Believe® White Melting Wafers
  • ¾ cup small diced fresh peach (about 1 peach)
  • ½ cup whole milk Greek yogurt
  • ⅛ teaspoon liquid stevia (optional)
  • ½ teaspoon vanilla

Instructions:

  1. Line a cookie sheet with parchment paper.
  2. Place 3 popsicle sticks on the lined cookie sheet, leaving at least 3 inches in between to make room for the bars.
  3. In a medium bowl, stir together the diced peaches, yogurt, stevia (if using), and vanilla.
  4. Mound the yogurt and peach mixture onto the end of each popsicle stick.  Each mound should be about 2-3 inches wide.
  5. Put the peach bars in the freezer to harden for 3 hours.
  6. After the bars are completely frozen, place the white baking wafers in a small heat-proof bowl and microwave in 10-second intervals, stirring in between, until completely melted and smooth.
  7. Carefully remove the bars from the parchment paper.
  8. Hold a bar over the bowl of melted wafers and spoon on a generous amount of melted wafers.
  9. Immediately spread to coat evenly with the melted wafers.
  10. Allow to harden, then store in the freezer in an airtight container or enjoy right away.
