Tropical Truffles

Yield: 24 truffles

Ingredients:
- 1 (9-ounce) bag Bake Believe® Milk Baking Chips
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon finely grated lime zest, plus additional for garnish
- 2/3 cup heavy cream
- 1 (1-ounce) bag freeze dried mango or freeze-dried pineapple (or a combination of both)
Instructions:
- Place baking chips, coconut and lime zest in a bowl. Heat the heavy cream to a gentle boil, then pour over chips. Let rest for 1 minute. Stir vigorously until mixture is melted, combined and smooth.
- Refrigerate for 30 minutes or until firm enough to hold shape.
- Place freeze dried mango into a food processer and pulse until pulverized into a powder. Transfer to a shallow bowl and set aside.
- Scoop about a tablespoon of the chocolatey mixture on to a parchment-lined pan. Repeat to make 24, then roll each into balls. Coat each in the pulverized mango mixture. Refrigerate for at least 15 minutes or until ready to serve. Garnish with additional lime zest when serving.
