Single Serving Chocolate Chip “Baked” Oats

Ingredients:
- 2 tablespoons Bake Believe® Semi-Sweet Baking Chips, divided
- 1 tablespoon unsalted butter
- ½ cup old-fashioned rolled oats
- 1 egg
- 1 ripe banana
- ½ teaspoon baking powder
- Pinch salt
Instructions:
- Place the 1 tablespoon of butter in a large ramekin or microwave-safe mug.
- Microwave for 15 seconds, or until melted.
- Carefully tilt the ramekin or mug to coat the sides with melted butter. The dish may be hot, so handle with a dry kitchen towel or oven mitts.
- Place the oats, egg, banana, baking powder, and salt in a blender and blend.
- Scrape down the sides of the blender and blend again until the egg is completely incorporated. It’s okay if there are still bits of oats.
- Pour the melted butter into the blender, leaving the remaining melted butter on the sides of your ramekin or mug.
- Blend the mixture again until the butter is well incorporated.
- Stir 1 tablespoon of the semi-sweet chips into the oatmeal mixture using a spoon. You can do this in the blender pitcher.
- Pour the blended oatmeal mixture into the greased ramekin or mug.
- Top with the remaining 1 tablespoon semi-sweet chips.
- Microwave for 2-2 ½ minutes or until the center has set.
- Allow to cool at least 5 minutes, then enjoy!
