Single Serving Chocolate Chip “Baked” Oats

Instructions:

  1. Place the 1 tablespoon of butter in a large ramekin or microwave-safe mug.
  2. Microwave for 15 seconds, or until melted.
  3. Carefully tilt the ramekin or mug to coat the sides with melted butter.  The dish may be hot, so handle with a dry kitchen towel or oven mitts.
  4. Place the oats, egg, banana, baking powder, and salt in a blender and blend.
  5. Scrape down the sides of the blender and blend again until the egg is completely incorporated.  It’s okay if there are still bits of oats.
  6. Pour the melted butter into the blender, leaving the remaining melted butter on the sides of your ramekin or mug.
  7. Blend the mixture again until the butter is well incorporated.
  8. Stir 1 tablespoon of the semi-sweet chips into the oatmeal mixture using a spoon. You can do this in the blender pitcher.
  9. Pour the blended oatmeal mixture into the greased ramekin or mug.
  10. Top with the remaining 1 tablespoon semi-sweet chips.
  11. Microwave for 2-2 ½ minutes or until the center has set.
  12. Allow to cool at least 5 minutes, then enjoy!
