Raspberry Chip Chia Mini Muffins

- ½ cup Bake Believe® Milk Chocolate Chips
- 1 cup almond flour
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1/3 cup maple syrup
- 1 large banana, mashed
- 1 egg
- 1 tablespoon olive oil
- 1 cup fresh raspberries
Instructions:
- Preheat oven to 350F. Grease muffin pan or line with paper liners.
- In a large bowl, mix almond flour, chia seeds, baking powder and salt.
- In a separate bowl mix maple syrup, mashed banana, egg and olive oil. Stir thoroughly to combine. Pour the wet ingredients onto the dry ingredients and stir to fully incorporate. Fold in chocolate chips and raspberries.
- Scoop mixture into prepared pan, filling almost to the top. Transfer to the oven and bake for 25 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and let cool completely before removing from pan.
- Store muffins in an airtight container.
