Pumpkin Chocolate Chip Skillet Cookie

Ingredients:
- 1 cup Bake Believe® Semisweet Baking Chips
- ¾ cup pumpkin puree
- ½ cup monkfruit sweetener
- ¼ cup maple syrup
- ¼ cup salted butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- ¾ cup coconut flour
- ¾ cup almond flour
- 1 ½ teaspoons pumpkin spice
- ¾ teaspoon baking soda
Instructions:
- Preheat oven to 350F. Whisk together pumpkin, monkfruit sweetener, maple syrup, melted butter, egg and vanilla extract.
- In a separate bowl, whisk together coconut flour, almond flour, pumpkin spice and baking soda.
- Fold the dry ingredients into the wet ingredients. Stir to thoroughly combine. Stir in baking chips.
- Transfer to a 10-inch cast iron skillet. Bake for 30-35 minutes or until center is set. If top starts to brown too much, cover with aluminum foil. Remove from oven and let cool for 10 minutes before serving.
