Pumpkin Chocolate Chip Skillet Cookie

Bake Believe Pumpkin Chocolate Chips Skillet Cookie

Ingredients:

  • 1 cup Bake Believe® Semisweet Baking Chips 
  • ¾ cup pumpkin puree
  • ½ cup monkfruit sweetener
  • ¼ cup maple syrup
  • ¼ cup salted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¾ cup coconut flour
  • ¾ cup almond flour
  • 1 ½ teaspoons pumpkin spice
  • ¾ teaspoon baking soda

Instructions:

  1. Preheat oven to 350F. Whisk together pumpkin, monkfruit sweetener, maple syrup, melted butter, egg and vanilla extract.
  2. In a separate bowl, whisk together coconut flour, almond flour, pumpkin spice and baking soda.
  3. Fold the dry ingredients into the wet ingredients. Stir to thoroughly combine. Stir in baking chips.
  4. Transfer to a 10-inch cast iron skillet. Bake for 30-35 minutes or until center is set. If top starts to brown too much, cover with aluminum foil. Remove from oven and let cool for 10 minutes before serving.
