Pistachio Cake with Strawberries

Ingredients:
For the cake
- 1 cup of pistachio flour
- 1 cup almond flour
- 2 teaspoons baking powder
- ½ cup butter, softened
- 1 cup maple syrup
- 1 cup Greek yogurt
- 2 eggs
- 1 teaspoon vanilla
For the frosting:
- 1 cup Bake Believe® Dark Chocolate Flavored Baking Chips
- 6 tablespoons unsalted butter
- 6-8 fresh strawberries, sliced in half
Instructions:
For the cake
- Preheat oven to 350F. Spray a 9-inch springform pan with non-stick spray.
- Mix, pistachio flour, almond flour and baking soda; set aside.
- Beat butter and maple syrup with an electric mixture on medium speed for 2 minutes. Add Greek yogurt, eggs and vanilla. Add the pistachio flour mixture and continue mixing until combined.
- Transfer to prepared pan and bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and let cool completely before frosting.
For the frosting
- Combine Bake Believe chips and butter in a microwave safe bowl. Microwave on low power, stirring every 30 seconds until melted and smooth. Pour on top of cooled cake and spread to cover. Top with strawberries. Transfer to refrigerator until ready to serve.
