Peanut Butter Mousse Cups

Ingredients: For the chocolate cups
- 1 cup Bake Believe® Dark Chocolate Chips
For the mousse
- 1 cup heavy cream
- ¾ cup peanut butter
- 1 tablespoon honey
- 1 teaspoon vanilla
- 1 (8-ounce) carton of cream cheese
Special equipment: silicone mini muffin pans Instructions:
- Melt the chocolate chips using a double boiler or in a microwave on low power, stirring every 30 seconds until melted and smooth.
- Transfer 2 teaspoons of melted chocolate into each of the silicone mini muffin cavities. Using a small spoon, spread chocolate throughout the bottom and up the sides to fully coat. Transfer to refrigerator while preparing the mousse.
- Whip the heavy cream to medium peaks and set aside. In a separate bowl, beat cream cheese, peanut butter, honey and vanilla on medium speed until combined and smooth, about 2 to 3 minutes.
- Fold whipped cream into mixture into peanut butter mixture, 1/3 a at time. Continue folding until fully incorporated and smooth.
- Pipe or spoon mousse into chocolate cups. Return to refrigerator for at 30 minutes or until ready to serve. Gently push bottom of silicone molds to remove chocolate filled cups.
