Peach Chocolate Flavored Mousse

Ingredients:
- 1 (9-ounce Bag) Bake Believe Dark Chocolate Chips
- 2 ½ cups heavy whipping cream, divided
- 1 teaspoon vanilla extract
- 1 cup fresh peach puree, plus peach slices for garnish
Instructions:
- Place the baking chips in a large bowl. Heat 1 cup cream to a simmer, stirring often. Remove from heat and pour over baking chips. Let stand for 1 minute, then stir until combined and smooth. Set aside to cool slightly for 10 minutes, stirring occasionally.
- Combine remaining 1 ½ cups of heavy cream and vanilla extract in a large bowl. Whip with an electric mixer on high speed until stiff peaks have formed. Fold the peach puree into the whipped cream.
- Pour half of the peach whipped cream into the cooled chocolate mixture and gently fold until fully incorporated. Repeat with remaining whipped cream and continue folding until fully incorporated.
- Transfer to induvial serving dishes. Loosely cover and refrigerate until ready to serve, at least 1 hour. Garnish with fresh peaches just before serving.
