Pancake Tacos

Pancake Tacos

Yield: 4 tacos

Ingredients: For the Chocolate Sauce:

  • ¼ cup  Bake Believe® Milk Baking Chips
  • ¼ cup heavy cream

For the Pancakes:

  • 1 ripe banana
  • 2 eggs
  • ⅛ teaspoon baking powder
  • Butter, as needed for cooking

For the Filling:

  • 1/3 cup Greek yogurt
  • 1 teaspoon honey
  • ½ cup small diced fresh strawberries
  • ½ cup fresh blueberries

Instructions:

  1. Place the milk baking chips and heavy cream  in a medium heat-proof bowl and microwave in 20-second intervals, stirring in between, until completely melted and smooth.
  2. Set the chocolate sauce aside to cool, stirring occasionally.
  3. Add the banana, eggs, and baking powder to a blender and blend until smooth to make the pancake batter.
  4. Place a medium non-stick skillet over medium heat.
  5. Once the pan is well preheated, grease with a small amount of butter.
  6. Pour enough of the blended pancake batter into the pan to make a circle of batter about 4 inches wide.
  7. Cook on one side until browned, about 3 minutes.  Flip and cook on the other side for 3 minutes more.
  8. Repeat with the remaining pancake batter and butter.
  9. Set pancakes aside to cool on a plate.
  10. In a medium bowl, combine the Greek yogurt and honey.
  11. Once the pancakes are cool, add about 1 heaping tablespoon of the sweetened yogurt to the center of each pancake and top with the diced strawberries and blueberries.
  12. Drizzle the top of the berries with the cooled chocolate sauce.
  13. Pick up the pancakes like you would a taco and enjoy!
