Pancake Tacos

Ingredients: For the Chocolate Sauce:
- ¼ cup Bake Believe® Milk Baking Chips
- ¼ cup heavy cream
For the Pancakes:
- 1 ripe banana
- 2 eggs
- ⅛ teaspoon baking powder
- Butter, as needed for cooking
For the Filling:
- 1/3 cup Greek yogurt
- 1 teaspoon honey
- ½ cup small diced fresh strawberries
- ½ cup fresh blueberries
Instructions:
- Place the milk baking chips and heavy cream in a medium heat-proof bowl and microwave in 20-second intervals, stirring in between, until completely melted and smooth.
- Set the chocolate sauce aside to cool, stirring occasionally.
- Add the banana, eggs, and baking powder to a blender and blend until smooth to make the pancake batter.
- Place a medium non-stick skillet over medium heat.
- Once the pan is well preheated, grease with a small amount of butter.
- Pour enough of the blended pancake batter into the pan to make a circle of batter about 4 inches wide.
- Cook on one side until browned, about 3 minutes. Flip and cook on the other side for 3 minutes more.
- Repeat with the remaining pancake batter and butter.
- Set pancakes aside to cool on a plate.
- In a medium bowl, combine the Greek yogurt and honey.
- Once the pancakes are cool, add about 1 heaping tablespoon of the sweetened yogurt to the center of each pancake and top with the diced strawberries and blueberries.
- Drizzle the top of the berries with the cooled chocolate sauce.
- Pick up the pancakes like you would a taco and enjoy!
