Ingredients: For the Crust:
- ½ cup Bake Believe® Dark Chocolate Baking Chips
- ¼ cup coconut oil, melted
- 2 ¼ cups almond flour
- 2 Tablespoons coconut flour
- 1 egg
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
For the Filling:
- ½ cup coconut cream, chilled
- ½ cup strawberries, sliced
- ¼ cup blueberries
- ¼ cup blackberries
- ½ cup mandarin orange slices
- 1 kiwi, sliced
Instructions:
- Preheat oven to 375F.
- On the stove or in the microwave, melt coconut oil and dark chocolate baking chips, stirring often until smooth.
- In a food processor, combine almond flour, coconut flour, egg, vanilla extract, and sea salt. Pulse a few times to combine then add melted baking chips and pulse until dough forms.
- Transfer dough to a tart pan and press into the bottom and up the sides.
- Transfer the pan to the oven and bake for 10 minutes. Remove and cool 20 minutes before filling.
- In a large mixing bowl with an electric mixer, beat coconut cream for 3-4 minutes, until fluffy.
- Fill prepared tart crust with coconut cream then arrange fruit on top. Slice and serve.
