Oatmeal Chip Breakfast Bars

Oatmeal Chip Breakfast Bars

Ingredients:

  • ½ cup Bake Believe ® Semi-Sweet Baking Chips
  • 2 ½ cups old fashioned oats
  • ¼ cup flaxseeds
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup maple syrup
  • 2 eggs
  • ½ cup Greek yogurt
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated orange peel

Instructions:

  1. Preheat oven to 350F. Line a 9×9-inch baking pan with parchment paper and set aside.
  2. In a large bowl, combine oats, flaxseeds, chia seeds, baking powder and salt and set aside.
  3. In a separate bowl, whisk together maple syrup, eggs, Greek yogurt, milk, vanilla and orange peel. Pour the wet mixture over the dry mixture and stir thoroughly to combine. Stir in chocolate chips.
  4. Transfer to prepared baking dish and bake for 30 minutes or until center is set and edges are just golden. Set aside to cool for 10 minutes before cutting and serving.
