No-Bake Lemon Bars

Ingredients: For the Crust:
- 1 ½ cups almond flour
- 3 tablespoons Confectioners Swerve
- 3 tablespoons melted unsalted butter, melted
- ¼ teaspoon salt
For the Filling:
- 1 ¼ cups Bake Believe® White Melting Wafers
- 1 cup lemon juice
- 2 teaspoons lemon zest
- 1 ¼ cups water
- 1 cup Swerve
- ½ teaspoon turmeric or yellow food coloring, as desired
- 2 envelopes (14 grams) unflavored gelatin
- 2 tablespoons unsalted butter
- 2 tablespoons Confectioners Swerve
Instructions:
- Line an 8-inch x 8-inch baking dish with parchment paper, so that some of the paper hangs over the edge to easily remove the bars when they’re done.
- In a medium bowl, stir together all the crust ingredients until well combined.
- Firmly press the crust ingredients into the prepared baking dish, pushing them about ½-inch up the side of the dish.
- Place the baking dish in the refrigerator while you prepare the filling.
- In a medium saucepan, combine the lemon juice, lemon zest, water, Swerve, and turmeric or food coloring.
- Sprinkle the gelatin on top of the lemon juice mixture in a thin, even layer.
- Allow the gelatin to bloom for 10 minutes, then place the saucepan over a medium heat.
- Cook, whisking frequently, until the mixture steams and begins to simmer.
- Remove from the heat, add the white melting wafers and 3 tablespoons butter
- Whisk until the melting wafers and butter melt completely.
- Set aside for 20 minutes to cool.
- Pour the slightly cooled lemon mixture over the chilled crust.
- Cover and chill in the refrigerator until the filling has set, about 2 hours.
- Place the Confectioners Swerve in a strainer.
- Dust the top of the lemon bars with the Confectioners Serve by tapping the strainer.
- Cut into 9 bars, then serve. Store extra servings in an airtight container in the refrigerator.
