No-Bake Double Chocolate Thumbprint

Ingredients: For the Cookie:

  • ¼ cup Bake Believe® Milk Baking Chips
  • ¼ cup unsweetened shredded coconut
  • ¾ cup nuts, any kind
  • 1 tablespoon cocoa powder
  • 2 tablespoons Keto-friendly sticky maple syrup
  • 2 tablespoons nut butter, any kind
  • Salt to taste

For the Filling:

  • ¼ cup Bake Believe® Milk Baking Chips
  • 3 tablespoons heavy cream

Instructions:

  1. Line a cookie sheet with parchment paper.
  2. Place the ¼ cup milk chips, coconut, and nuts in a small food processor.
  3. Process until the nuts are finely chopped.
  4. Add the remaining ingredients for the cookie and blend until the mixture begins to come together to form a ball.
  5. Divide the mixture into 10 equal portions and roll into balls.
  6. If the mixture is too dry or crumbly, you can add more nut butter or syrup, as needed.
  7. Flatten the balls, then press a well into the middle of each cookie.
  8. Place the cookies onto the prepared cookie sheet, then place in the refrigerator while you make the filling.
  9. Place the ¼ cup milk chips and heavy cream in a heat-proof bowl and microwave in 10-second intervals, stirring in between, until melted.
  10. Immediately fill each cookie with the melted mixture.
  11. Return the cookies to the refrigerator until the middle becomes firm.
  12. Enjoy right away or store in an airtight container in the refrigerator.
