No-Bake Double Chocolate Thumbprint

Ingredients: For the Cookie:
- ¼ cup Bake Believe® Milk Baking Chips
- ¼ cup unsweetened shredded coconut
- ¾ cup nuts, any kind
- 1 tablespoon cocoa powder
- 2 tablespoons Keto-friendly sticky maple syrup
- 2 tablespoons nut butter, any kind
- Salt to taste
For the Filling:
- ¼ cup Bake Believe® Milk Baking Chips
- 3 tablespoons heavy cream
Instructions:
- Line a cookie sheet with parchment paper.
- Place the ¼ cup milk chips, coconut, and nuts in a small food processor.
- Process until the nuts are finely chopped.
- Add the remaining ingredients for the cookie and blend until the mixture begins to come together to form a ball.
- Divide the mixture into 10 equal portions and roll into balls.
- If the mixture is too dry or crumbly, you can add more nut butter or syrup, as needed.
- Flatten the balls, then press a well into the middle of each cookie.
- Place the cookies onto the prepared cookie sheet, then place in the refrigerator while you make the filling.
- Place the ¼ cup milk chips and heavy cream in a heat-proof bowl and microwave in 10-second intervals, stirring in between, until melted.
- Immediately fill each cookie with the melted mixture.
- Return the cookies to the refrigerator until the middle becomes firm.
- Enjoy right away or store in an airtight container in the refrigerator.
