No Bake Chocolate Oatmeal Bars

Ingredients:

  • 1 cup Bake Believe® Semisweet Chocolate Chips
  • ½ cup butter
  • 1/3 cup maple syrup
  • 2 cups old fashion oats
  • ½ cup chopped cashews
  • 1 teaspoon cinnamon
  • 2/3 cups peanut butter

Instructions:

  1. Line an 8×8-inch baking pan with parchment paper; set aside.
  2. Combine butter and maple syrup in a medium saucepan. Cook over medium heat, stirring often until the mixture is boiling. Let boil for one minute, then add oats, cashews and cinnamon and stir until fully incorporated. Remove mixture from heat and let cool slightly. Press into bottom of prepared pan and set aside.
  3. Combine peanut butter and chocolate chips; melt in the microwave on low powder, stirring every 30 seconds or until smooth. Pour over oats. Use a spatula to spread the top, then transfer to refrigerator until firm, about 2 hours.
  4. Cut into squares and enjoy. Store in an airtight container in refrigerator.
