Bake Believe’s Lucky Keto White Matcha Donuts

Ingredients:
For the Donuts:
- 1 cup almond flour
- 2 Tablespoons coconut flour
- 1 Tablespoon matcha powder
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 large eggs
- ¼ cup keto-friendly maple flavored syrup
- ¼ cup unsalted butter, melted and slightly cooled
- ¼ cup heavy cream
- 1 teaspoon pure vanilla extract
For the White Chocolate Matcha Glaze:
- ½ cup Bake Believe ® White Melting Wafers
- 2 teaspoon coconut oil
- 1 Tablespoon matcha powder
Instructions:
- Preheat oven to 375F. Place a silicone donut pan on a baking sheet. Set aside.
- In a large mixing bowl, whisk almond flour, coconut flour, matcha powder, baking powder, cinnamon, and salt until combined.
- In a separate bowl, whisk eggs, syrup, melted butter, heavy cream, and vanilla until smooth.
- Add wet mixture to dry mixture. Stir to combine.
- Divide batter evenly between 6 donut cavities.
- Transfer pan to oven. Bake 20-25 minutes, until a toothpick inserted into the center comes out clean. Remove from oven and cool 20 minutes. Carefully remove donuts from the mold and place on a wire rack over a baking sheet.
- Remove 2 Tablespoons of Bake Believe’s White Melting Wafers and set aside. On the stove or in the microwave, melt remaining white wafers and coconut oil. Add matcha powder and stir until completely combined.
- Spoon or pour glaze over donuts. Top with white wafers.
