Low Carb Turtles
Yield: 14 turtles

Ingredients: For the Caramel:
- ¾ cup heavy cream
- ⅓ cup allulose
- 1 tablespoon unsalted butter
- ½ teaspoon vanilla
- Heavy pinch of salt
To Finish the Turtles:
- ⅓ cup Bake Believe® Milk Baking Chips
- 42 whole pecans (3 for each turtle)
- Coarse salt for topping
Instructions:
- In a medium saucepan, combine all of the ingredients for the caramel.
- Place over high heat and bring to a boil.
- Reduce the heat to medium-high. Cook, stirring occasionally, until caramelized, about 11 minutes.
- While the caramel is cooking, arrange the pecans on a parchment-lined cookie sheet.
- Place them so that the ends are touching together in a flower-like design.
- After the caramel is done cooking, allow to cool for 3 minutes, stirring occasionally.
- Spoon the caramel mixture into the center of each group of pecans, using 1 teaspoon of caramel for each.
- If the caramel is spreading too much, allow to cool a few minutes longer.
- Place the cookie sheet in the refrigerator to allow the caramel to set up, about 15 minutes.
- Meanwhile, place the ⅓ cup milk chips in a medium heat-proof bowl.
- Microwave in 10-second intervals, stirring in between until almost melted. Continue stirring until the chips are just melted.
- Spoon 1 teaspoon of melted milk chips on top of the caramel.
- Sprinkle the chocolate with coarse salt and place in the refrigerator for another 15 minutes.
- Enjoy right away or store in an airtight container in the refrigerator for up to 1 week.
