Bake Believe’s Low Carb, No Sugar Added White Raspberry Popsicles

For the White Chocolate Layer:
- ½ cup Bake Believe ® White Melting Wafers
- 1 (13.5-ounce) can full fat coconut milk
- ¼ cup water
- 2 ½ tablespoons Swerve
- â…› teaspoon xanthan gum
- â…› teaspoon salt
- ¼ teaspoon vanilla
For the Raspberry Layer:
- 2 cups fresh or frozen raspberries
- ¼ cup water
- 1 tablespoon Swerve
Instructions:
- In a medium saucepan, whisk all of the ingredients together for the white chocolate layer.
- Place over medium heat and whisk until the white melting wafers are melted.
- Set aside to cool, whisking occasionally, until the mixture thickens, about 20 minutes.
- In the meantime, combine all of the ingredients for the raspberry layer in a small food processor and blend until mostly smooth.
- Spoon the white chocolate layer into the popsicle mold and alternate with the raspberry layer until the molds are full.
- Place in the freezer for 1 hour, then insert popsicle sticks. Freeze for 3 hours more.
