Bake Believe’s Low Carb, No Sugar Added Mini Key Lime Pies

Ingredients: For the Crust:
- 1 cup almond flour
- 2 tablespoons Confectioners Swerve
- 2 tablespoons melted butter
- â…› teaspoon salt
For the Filling:
- ½ cup Bake Believe ® White Melting Wafers
- 6 ounces cream cheese, softened
- ½ cup Confectioners Swerve
- 2 eggs
- 3 tablespoons key lime juice
- ½ teaspoon key lime zest
For the Garnish:
- 1 cup chilled heavy cream
- 2 tablespoons Confectioners Swerve
- 1 teaspoon vanilla
- 8 key lime slices
Instructions
- Preheat the oven to 350°F. Line a cupcake pan with 8 paper liners.
- In a medium bowl, combine ingredients for the crust. Press ¼ cup of the crust mixture firmly into each cupcake liner using the bottom of a measuring cup. Bake the crusts for 9 minutes, then set aside to cool while you make the filling.
- Place the ½ cup of Bake Believe White Melting Wafers in a medium heat-proof bowl and microwave in 30 second intervals, stirring in between, until melted. Set aside to cool slightly.
- In a medium bowl, beat the cream cheese until fluffy with an electric mixer. Add the ½ cup Swerve and beat until incorporated. Add the eggs, one at a time, beating after each addition. Add the lime juice and zest, then mix again.
- Add the melted white wafers, a little bit at a time, beating after each addition. Pour an even amount of the pie batter into each crust. Tap firmly on the counter to remove any bubbles.
- Bake the mini pies until no longer jiggly in the middle, about 12 minutes. Do not allow to brown. Chill the pies in the refrigerator for 2 hours.
- While the pies are chilling, make the whipped cream for the garnish. Place the 1 cup heavy cream, 3 tablespoons Confectioners Swerve, and 1 teaspoon vanilla in a medium bowl and beat until you achieve stiff peaks.
- Top each chilled pie with whipped cream and a lime slice. Enjoy immediately or store in an airtight container in the refrigerator until ready to eat.
