Loaded Healthy Breakfast Cookies

Ingredients:
- ½ cup Bake Believe ® Semi-Sweet Baking Chips
- 1 large banana, mashed
- 1 cup unsweetened creamy peanut butter
- ¼ cup maple syrup or sugar-free maple syrup alternative
- ¼ cup melted coconut oil
- 1 ½ cups old-fashioned oats
- ¼ cup flax meal
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup dried cranberries
- ½ cup chopped pecans
- ½ cup shredded unsweetened coconut
Instructions:
- Preheat the oven to 325°F. Line 2 cookie sheets with parchment paper.
- In a large bowl, stir together the mashed banana, peanut butter, maple syrup, and coconut oil until well combined.
- Add the remaining ingredients and mix well.
- Drop the dough onto the prepared cookie sheets by ¼-cup portions and flatten until about ½-inch thick.
- Bake in the preheated oven until browned around the edges, about 16 minutes.
- Cool on the cookie sheet for 15 minutes, then transfer to a cooling rack and allow to cool to room temperature, about 30 minutes more.
