Loaded Healthy Breakfast Cookies

Ingredients:

  • ½ cup Bake Believe ® Semi-Sweet Baking Chips
  • 1 large banana, mashed
  • 1 cup unsweetened creamy peanut butter
  • ¼ cup maple syrup or sugar-free maple syrup alternative
  • ¼ cup melted coconut oil
  • 1 ½ cups old-fashioned oats
  • ¼ cup flax meal
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup dried cranberries
  • ½ cup chopped pecans
  • ½ cup shredded unsweetened coconut

Instructions:

  1. Preheat the oven to 325°F.  Line 2 cookie sheets with parchment paper.
  2. In a large bowl, stir together the mashed banana, peanut butter, maple syrup, and coconut oil until well combined.
  3. Add the remaining ingredients and mix well.
  4. Drop the dough onto the prepared cookie sheets by ¼-cup portions and flatten until about ½-inch thick.
  5. Bake in the preheated oven until browned around the edges, about 16 minutes.
  6. Cool on the cookie sheet for 15 minutes, then transfer to a cooling rack and allow to cool to room temperature, about 30 minutes more.
