Bake Believe’s Keto Heaven in a Pan

Ingredients:
For the Crust:
- ½ cup very finely chopped pecans (fine like almond flour or slightly more coarse)
- 1 ½ cups almond flour
- 2 tablespoons Confectioners Swerve
- 5 tablespoons unsalted butter, melted
- ½ teaspoon salt
For the Cream Cheese Layer:
- 8 ounces cream cheese, softened
- ¼ cup heavy cream
- 1 cup Confectioners Swerve
- ½ teaspoon vanilla
For the Chocolate Layer:
- ¾ cup Bake Believe® Dark Chocolate Baking Chips
- 2 cups heavy cream
- ¾ cup Confectioners Swerve
- 1 teaspoon xanthan gum
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla
For the Whipped Cream Layer:
- 1 ½ cups heavy cream
- 2 tablespoons Confectioners Swerve
- ½ teaspoon vanilla
- 3 tablespoons Bake Believe® Dark Chocolate Baking Chips, roughly chopped
Instructions:
- Preheat oven to 350°F.
- Place all of the ingredients for the crust in a medium mixing bowl and mix well. Firmly press evenly into a 9-inch x 9-inch casserole dish or baking pan.
- Bake until the edges begin to brown, about 15 minutes. Set aside in the refrigerator to cool.
- For the cream cheese layer, beat the cream cheese in a large bowl until light and fluffy. Add the remaining ingredients for the cream cheese layer and beat until you form firm peaks, about 5 minutes.
- When the crust has completely cooled, spread the cream cheese layer over the crust. Place in the refrigerator.
- To make the chocolate layer, whisk together the dark baking chips, heavy cream, Confectioners Swerve, and xanthan gum in a medium saucepan.
- Place over medium heat and whisk until the chocolate melts and the mixture thickens.
- Remove from the heat, then whisk in the butter and vanilla. Cool the mixture for 15 minutes, stirring occasionally.
- Spread the chocolate mixture over the cream cheese layer. Cover with plastic, pressing it onto the chocolate layer. Chill in the refrigerator for 1 hour.
- In a chilled bowl, beat together the ingredients for the whipped cream layer until stiff peaks form. Spread over the chocolate layer.
- Sprinkle the chopped dark baking chips over the whipped cream and serve.
- If it is too soft when serving, place in the freezer for 15 minutes and try again. Enjoy!ng it onto the chocolate layer. Chill in the refrigerator for 1 hour.
