Bake Believe’s Keto Friendly Red, White, and Blue Brownie Bites

Ingredients:
For the Brownie Bites
- 1 cup Bake Believe® Dark Chocolate Baking Chips
- 10 tablespoons unsalted butter
- 3 eggs, beaten
- ½ teaspoon vanilla
- ½ tablespoon instant coffee
- ½ cup almond flour
- ¼ cup cocoa powder
- ½ cup Swerve
- ½ teaspoon baking powder
For the Garnish
- 1 cup heavy cream
- 2 tablespoons confectioners Swerve
- ½ teaspoon vanilla
- 1 cup fresh strawberries, sliced
- ½ cup fresh blueberries
Instructions:
- Preheat the oven to 350°F. Butter a mini muffin pan.
- Place the 1 cup dark chips and 10 tablespoons butter in a heat-proof bowl and microwave in 30 second intervals, stirring in between, until melted.
- Place the eggs, vanilla, instant coffee in a large bowl and whisk together until the instant coffee has dissolved.
- Pour in the melted semi-sweet mixture and whisk, once more, to combine.
- Sift the almond flour, cocoa powder, Swerve, and baking powder into the wet mixture.
- Stir until combined.
- Evenly distribute the brownie mixture in the mini muffin pan to make 20 brownie bites.
- Bake until the middle of the brownie bites just begins to rise, about 9 minutes.
- Allow to cool for 10 minutes, then remove the brownie bites from the pan and place on a cooling rack until they are room temperature.
- Place the 1 cup heavy cream, confectioners Swerve, and ½ teaspoon vanilla in a large chilled bowl and beat with an electric mixer until you achieve stiff peaks.
- Top each cooled brownie bite with a small amount of whipped cream, sliced strawberries, and blueberries.
