Honey Walnut & Date Truffles

Ingredients:
- 1 (9 ounce) bag Bake Believe® Semi-Sweet Chocolate Flavored Chips
- 8 medjool dates, pitted
- 2 tablespoons honey
- 2 teaspoons olive oil
- 1 cup walnuts, plus additional for garnish
- ½ teaspoon vanilla extract
- 1 teaspoon coconut oil
- 1 teaspoon flake salt
Instructions:
- Place dates, honey and olive oil into a food processor. Process until mixture is smooth and sticky, about 2 to 3 minutes. Scrape the sides, then add walnuts and vanilla and process for 1 minute more.
- Scoop out about tablespoon of the mixture and roll into truffles. Transfer to freezer for 15 minutes.
- Melt chocolate chips and coconut oil together using a double boiler or in the microwave on low power, stirring every 30 seconds until melted and smooth.
- Dip chilled truffles into melted chocolate. Transfer each to a parchment-lined baking sheet. Sprinkle with flake salt and chopped walnuts. Refrigerate until set, about 15 minutes.
