  1. Melt butter in a medium skillet. Add kataifi and cook over medium-high heat, stirring constantly until deep golden brown, about 5 minutes. Remove from heat and add honey. Mix to combine and set aside.
  2. Line a baking sheet with parchment paper. Melt chocolate chips using a double boiler or in a microwave on low power stirring every 30 seconds until melted and smooth. Pour chocolate onto parchment and spread in a thin layer, reserve two tablespoons of chocolate for later use.
  3. Sprinkle on cooked kataifi and pistachios. Drizzle reserved milk chocolate on top. Transfer to refrigerator until set, about 15 minutes.
