Chocolate Dipped Apricot Pops

Ingredients:
- 1 cup Bake Believe® Semi-Sweet Baking Chips
- 24 large, dried apricots
- 24 small food safe wooden sticks
- 1 teaspoon coconut oil
- 1 teaspoon sea salt
Instructions:
- Line a baking sheet with parchment paper. Insert wooden sticks into each of the apricots.
- Combine baking chips and coconut oil. Melt, using a double boiler or in the microwave on low power, stirring every 20 seconds until melted and smooth.
- Dip each apricot into chocolatey mixture about halfway, then transfer to prepared baking sheet. Repeat with remaining apricots. Sprinkle with salt, then transfer to refrigerator until set and enjoy!
