Instructions:

  1. Line a baking sheet with parchment paper. Insert wooden sticks into each of the apricots.
  2. Combine baking chips and coconut oil. Melt, using a double boiler or in the microwave on low power, stirring every 20 seconds until melted and smooth.
  3. Dip each apricot into chocolatey mixture about halfway, then transfer to prepared baking sheet. Repeat with remaining apricots. Sprinkle with salt, then transfer to refrigerator until set and enjoy!
