Chocolate Swirl Brownies

Ingredients: For the : Brownies

  • 1 cup Bake Believe® Milk Baking Chips
  • 10 Tablespoons unsalted butter, cut into slices
  • 3 eggs room temperature
  • ½ teaspoon vanilla
  • ½ cup almond flour
  • ¼ cup cocoa powder
  • ¾ cup Swerve
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the : Swirl

  • ½ cup Bake Believe® White Melting Wafers, divided in 2
  • Red food coloring as needed
  • Blue food coloring as needed

Instructions:

  1. Preheat the oven to 350°F.
  2. Line a 9-inch x 9-inch casserole dish with parchment paper, folding it over the edges of the dish so that the brownies can be easily removed.
  3. Place the milk chips and butter in a large bowl and microwave in 30-second intervals, stirring in between, just until melted.
  4. If the butter mixture is very hot, allow to cool so that you can add the eggs without cooking them. The melted mixture should be warm to the touch, but not hot.
  5. Add the eggs to the melted mixture, one at a time, whisking after each addition, until fully incorporated.
  6. Stir in the vanilla.
  7. Add the almond flour, cocoa powder, Swerve, baking powder, and salt and mix completely.
  8. Bake the brownies until the edges puff, but the middle is still slightly jiggly, about 25 minutes.
  9. Allow the brownies to cool for 20 minutes, then carefully remove and transfer to a cooling rack.
  10. Let the brownies cool to room temperature, about 2 hours more.
  11. For the swirl, divide the ½ cup of white melting chips between 2 microwave-safe bowls, and melt in the microwave, stirring every 10 seconds until fully melted.
  12. Add a drop of blue food coloring to one bowl, and a drop of red to another, adding only enough to create a soft color.
  13. Stir the food coloring in each bowl completely.
  14. Add a few tablespoons of each color to the top of the brownies randomly.
  15. Using a chopstick, stir through the tablespoon drops, creating swirls. Be careful not to over mix the colors.
  16. Allow to cool and set.
  17. Cut into 9 squares with a warm knife and enjoy.
