Chocolate Nut Thins

  1. Line a baking sheet with parchment paper. Place nuts in a large bowl.
  2. Melt chocolate using a double boiler or in the microwave on low power, stirring every 30 seconds until melted and smooth.
  3. Pour the chocolate over the nuts and stir thoroughly to fully coat.
  4. Pour mixture onto prepared pan and place a second sheet of parchment paper on top. Using a rolling pin roll the mixture into a flat sheet between the parchment paper.
  5. Using a 2-inch round cookie cutter, cut circular shapes. Collect and re-roll mixture as necessary. Transfer to refrigerator until completely set about 1 hour. Store in refrigerator until ready to serve and enjoy.
