Chocolate-Covered Banana Sushi

Ingredients:
- 1 cup Bake Believe® Dark Chocolate Baking Chips
- 2 bananas (the straighter, the better), peeled and cut in half crosswise
- 1 tablespoon coconut oil
- 2 tablespoons shredded unsweetened coconut
- 1 kiwi, peeled and diced into ¼-inch cubes
- 2 large fresh strawberries, green tops removed and diced into ¼-inch cubes
- 6-9 small blueberries
- 3 tablespoons creamy peanut butter
Instructions:
- Line a cookie sheet with parchment paper.
- Insert a popsicle stick into the cut side of the banana pieces and set aside.
- Place the dark chips and coconut oil in a heat-proof bowl and microwave in 20-second intervals, stirring in between, until completely melted and smooth.
- Transfer the melted chocolate to a small glass tall enough to dip the bananas.
- Dip a banana into the melted chocolate so that it covers the banana.
- Remove the banana from the chocolate and allow to drain very well.
- Sprinkle the chocolate-covered banana with the shredded coconut and place on the prepared cookie sheet.
- Repeat with the remaining bananas, then freeze for 7 minutes. Do not freeze longer, as the chocolate can become too brittle to slice.
- When the chocolate is firm, remove the bananas from the freezer.
- Holding the popsicle stick, slice the end off of the banana. Then slice the banana into 4 equal pieces.
- As you slice, carefully remove the popsicle sticks from the bananas. If the chocolate begins to crack, you can allow it to warm up at room temperature for 5 minutes then try again.
- Carefully and slowly insert a chopstick through the center of the banana pieces and gently wiggle to create a hole in the center of the banana.
- If you need a larger hole, you can also carve the middle by drilling into the center of the banana with a popsicle stick.
- Insert blueberries, diced strawberries, and diced kiwi into the hole in the center of the banana pieces.
- Place the peanut butter in a small, heat-proof bowl and warm in 10-second intervals, stirring in between, until the peanut butter becomes thinner so that you can dip your banana sushi into it.
- Arrange the banana sushi on a plate along with the peanut butter.
- Serve with chopsticks and enjoy right away or store in an air-tight container in the freezer for a frozen treat.
