Chocolate-Coconut Energy Balls

Ingredients:
- ¼ cup Bake Believe® Dark Chocolate Baking Chips
- ⅔ cup unsweetened coconut flakes, and extra for coating
- ¼ cup unsweetened almond butter
- 1 tablespoon cocoa powder
- Pinch of salt
- 1 ½ tablespoon Confectioners Swerve
- ¼ teaspoon coconut oil
Instructions:
- Pulse dark chips in a processor until finely chopped and set aside in a bowl.
- Add coconut flakes to the processor and finely chop.
- Add almond butter, cocoa powder, and salt.
- Add Confectioners Swerve and process until it all comes together.
- Transfer to a bowl and mix in the finely chopped chocolate chips.
- Divide into 6 portions, then roll into balls and place in the freezer for 5 minutes.
- Roll each ball in your hands briefly to warm the surface, then coat in coconut flakes.
- Chill for 15 minutes in the refrigerator.
- Enjoy immediately or store for up to 3 days in an airtight container in the refrigerator.
