Chocolate Chip Pumpkin Spice Pancakes

Ingredients:
- ¾ cup Bake Believe® Dark Chocolate Chips
- 1 ½ cups almond flour
- 1 teaspoon pumpkin pie spice
- 1 teaspoon baking powder
- 1 cup milk
- ½ cup pumpkin puree
- 1 egg
- 3 tablespoons maple syrup
- 2 tablespoons avocado oil
- 1 teaspoon vanilla extract
- Butter and maple syrup for serving
Instructions:
- Combine almond flour, pumpkin pie spice and baking powder in a large bowl. Whisk together until fully combined; set aside. In a separate bowl, combine milk, pumpkin puree, egg, syrup, oil, and vanilla. Pour wet mixture on to dry mixture and stir just until batter has formed. Stir in dark chocolate chips.
- Heat a non-stick pan over medium heat. Drop 2 to 3 tablespoons of batter into the center of the pan, spreading out slightly in a disk shape. Cook batter for about 2 minutes; flip pancake and cook for an additional 1 minute. Repeat with remaining batter.
- Serve pancakes immediately with butter and maple syrup and enjoy!
