Chocolate Chip Granola Muffins

Ingredients:

For the muffins:

  • 1 cup Bake Believe® Milk Chocolate Chips
  • 1 ½ cups oat flour
  • ½ cup almond flour
  • 1 ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon of salt
  • ½ cup maple syrup
  • ¼ cup butter, melted 
  • ½ cup milk
  • 1 egg
  • 1 teaspoon vanilla extract

For the topping:

  • 1 cup old fashioned oats
  • ½ cup slices almonds
  • 2 teaspoons chia seeds
  • 2 tablespoons olive oil
  • 2 tablespoon maple syrup

Instructions:

  1. Preheat oven to 350F. Line a muffin pan with paper liners.
  2. In a large bowl, mix oat flour, almond flour, baking powder, cinnamon and salt.
  3. In a separate bowl mix maple syrup, butter, milk and egg. Stir thoroughly to combine. Pour the wet ingredients onto the dry ingredients and stir to fully incorporate. Fold in chocolate chips.
  4. Prepare the topping: Combine oats, almonds, chia seeds, olive oil and maple syrup.
  5. Scoop muffin batter mixture into prepared pan, filling each cup almost to the top. Spoon topping mixture on top. Transfer to the oven and bake for 25 minutes or until a toothpick inserted int the center comes out clean.
  6. Remove from oven and let cool for 15 minutes before removing from pan. Store muffins in an airtight container.
