Chocolate Chip Granola Muffins

Ingredients:
For the muffins:
- 1 cup Bake Believe® Milk Chocolate Chips
- 1 ½ cups oat flour
- ½ cup almond flour
- 1 ¼ teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ teaspoon of salt
- ½ cup maple syrup
- ¼ cup butter, melted
- ½ cup milk
- 1 egg
- 1 teaspoon vanilla extract
For the topping:
- 1 cup old fashioned oats
- ½ cup slices almonds
- 2 teaspoons chia seeds
- 2 tablespoons olive oil
- 2 tablespoon maple syrup
Instructions:
- Preheat oven to 350F. Line a muffin pan with paper liners.
- In a large bowl, mix oat flour, almond flour, baking powder, cinnamon and salt.
- In a separate bowl mix maple syrup, butter, milk and egg. Stir thoroughly to combine. Pour the wet ingredients onto the dry ingredients and stir to fully incorporate. Fold in chocolate chips.
- Prepare the topping: Combine oats, almonds, chia seeds, olive oil and maple syrup.
- Scoop muffin batter mixture into prepared pan, filling each cup almost to the top. Spoon topping mixture on top. Transfer to the oven and bake for 25 minutes or until a toothpick inserted int the center comes out clean.
- Remove from oven and let cool for 15 minutes before removing from pan. Store muffins in an airtight container.
