Chocolate Chip Banana Bread

Ingredients:

  • 1 cup Bake Believe® Dark Chocolate Chips
  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • ½ teaspoon xanthan gum
  • 2 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 cup ripe mashed banana
  • 2 eggs
  • 1/3 cup coconut oil
  • ¼ cup monk fruit sweetener

Instructions:

  1. Preheat oven to 350F. Grease a 9 x 5 x 4-inch loaf pan.
  2. Mix almond flour, coconut flour, xanthan gum, baking powder and cinnamon; set aside.
  3. Beat banana, eggs, coconut oil, and monkfruit sweetener on medium speed until well combined, about 2 minutes. Add flour mixture and beat on low until just incorporated. Beat in chocolate chips. Transfer to prepared loaf pan and smooth the top.
  4. Bake for 50 to 60 minutes or until center is set. Cover with aluminum foil after 30 minutes of baking to prevent browning. Remove from oven and let cool for 30 minutes. Remove from pan and let cool completely before slicing and enjoy!
