Chocolate Chip Apple Betties

Ingredients: For the filling:

  • 1/4 cup Bake Believe ® Milk Chocolate Baking Chips
  • 2 Tablespoon unsalted butter, melted
  • ½ cup zucchini; peeled, seeded, and small diced
  • ½ cup apple, peeled and seeded
  • 1 Tablespoon lemon juice
  • 2 Tablespoons monk fruit erythritol sweetener
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon numeg
  • ¼ teaspoon salt

For the crumble:

  • ¼ cup raw pecans
  • 2 Tablespoons unsalted butter, room temperature
  • ½ cup almond flour
  • 2 Tablespoons monk fruit erythritol sweetener
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions:

  1. Preheat oven to 375F.
  2. To make the filling: In a large mixing bowl, combine butter, zucchini, apple, lemon juice, sweetener, cinnamon, ginger, nutmeg, and salt. Mix thoroughly to coat.
  3. Divide mixture between 2 small baking dishes or ramekins and spread into an even layer. Transfer to oven and bake 30-35 minutes, until tender and bubbling.
  4. To make the crumble: In a food processor, pulse pecans 5-7 times, until chopped. Add butter, almond flour, sweetener, cinnamon, and salt. Pulse 3-4 times to combine.
  5. Remove baking dishes from oven. Sprinkle crumble over top in an even layer. Top with chocolate baking chips. Return to oven for 10 minutes.
