Chocolate Chip Apple Betties

Ingredients: For the filling:
- 1/4 cup Bake Believe ® Milk Chocolate Baking Chips
- 2 Tablespoon unsalted butter, melted
- ½ cup zucchini; peeled, seeded, and small diced
- ½ cup apple, peeled and seeded
- 1 Tablespoon lemon juice
- 2 Tablespoons monk fruit erythritol sweetener
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon numeg
- ¼ teaspoon salt
For the crumble:
- ¼ cup raw pecans
- 2 Tablespoons unsalted butter, room temperature
- ½ cup almond flour
- 2 Tablespoons monk fruit erythritol sweetener
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
Instructions:
- Preheat oven to 375F.
- To make the filling: In a large mixing bowl, combine butter, zucchini, apple, lemon juice, sweetener, cinnamon, ginger, nutmeg, and salt. Mix thoroughly to coat.
- Divide mixture between 2 small baking dishes or ramekins and spread into an even layer. Transfer to oven and bake 30-35 minutes, until tender and bubbling.
- To make the crumble: In a food processor, pulse pecans 5-7 times, until chopped. Add butter, almond flour, sweetener, cinnamon, and salt. Pulse 3-4 times to combine.
- Remove baking dishes from oven. Sprinkle crumble over top in an even layer. Top with chocolate baking chips. Return to oven for 10 minutes.
