Cherry Chocolate Chip Cobbler

Ingredients:
For the filling:
- ½ cup Bake Believe® Semisweet Chocolate Chips
- 3 cups sweet cherries, pits removed and cut in half
- ¼ cup maple syrup
- 2 teaspoons cornstarch
- 1 teaspoon vanilla extract
For the topping
- ½ cup coconut flour
- 1/3 cup almond flour
- 1 teaspoon baking powder
- 4 tablespoons salted butter, melted
- 1 egg
Instructions:
For the filling:
- Preheat oven to 350F. Stir together cherries, maple syrup, cornstarch, and vanilla extract. Transfer to a 9×9-inch baking dish. Sprinkle chocolate chips on top and set aside.
For the topping:
- Combine coconut flour, almond flour and baking powder in a medium bowl. Stir to combine. Add melted butter and egg and stir to fully incorporate.
- Place batter in small dollops on top of the cherry filling. Bake for 35 to 40 minutes or until juices are bubbling and top is golden.
- Let cobbler rest for at least 30 minutes before serving and enjoy.
