Brownie Fudge Sundae in a Mug for Two

Ingredients: For the Hot Fudge Sauce:
- 1 tablespoon Bake Believe® Dark Chocolate Baking Chips
- 2 tablespoons heavy cream
For the Mug Brownie:
- 2 eggs
- 2 tablespoons Swerve
- 2 tablespoons heavy cream
- 2 tablespoons melted butter
- 1 teaspoon vanilla
- 2 tablespoons coconut flour
- 2 tablespoons cocoa powder
- 1 tablespoon baking powder
- 2 tablespoons Bake Believe® Dark Chocolate Baking Chips
For Garnish:
- 2 scoops keto-friendly ice cream
- Chopped nuts (optional)
Instructions:
- Place the 1 tablespoon dark chips and 2 tablespoons heavy cream in a small heat-proof bowl and microwave in 10-second intervals, stirring in between, until melted.
- Set the hot fudge mixture aside. It will thicken as it cools.
- Generously butter 2 microwave-safe coffee mugs.
- In a medium bowl, whisk together the eggs, Swerve, 2 tablespoons heavy cream, butter, and vanilla.
- Add the coconut flour, cocoa powder, baking powder, and 2 tablespoons dark chips.
- Stir well to combine, then evenly distribute the mixture among the 2 mugs.
- Microwave the mug brownies until no longer wet on the top, about 1 minute and 30 seconds.
- Allow the mug brownies to cool for 10 minutes.
- Top each brownie with a scoop of ice cream.
- Drizzle with the hot fudge. If the hot fudge becomes too thick, stir in more cream, as needed.
- Top the sundaes with chopped nuts, if using, and enjoy!
