Blueberry and Crumble Sundae with Chocolate Sauce

Ingredients: For the chocolate sauce:
- ¼ cup Bake Believe® Milk Baking Chips
- ⅓ cup Heavy cream
For the crumble:
- 2/3 cup almond flour
- 2 tablespoons powdered erythritol (or your preferred keto sweetener)
- 2 tablespoons melted unsalted butter
- ⅛ teaspoon salt
For the blueberry sauce:
- 1 cup fresh or frozen blueberries
- 1 tablespoon lemon juice
- 2 tablespoons granulated Swerve
To finish:
- 2 cups Keto-friendly vanilla ice cream, or more as desired
- ¼ cup Fresh blueberries
- ¼ cup Bake Believe® Milk Baking Chips
Instructions:
- In a small saucepan, combine the blueberries, lemon juice, and erythritol. Cook over medium heat, stirring occasionally, until the blueberries release their juices and the mixture thickens slightly, about 15 minutes.
- Remove from heat and let it cool in the refrigerator until fully chilled, about 25 min. If the blueberry sauce becomes too thick, you can mix in water, 1 teaspoon at a time, until it is chunky, yet saucy.
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the almond flour, powdered erythritol, salt and melted butter for the crumble. Mix until the mixture resembles coarse crumbs.
- Spread the crumble mixture evenly onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 5 minutes or until the crumble is firm and crispy. Remove from the oven and let it cool at room temp until no longer hot, about 15 min.
- Microwave heavy cream and Bake Believe® Milk Baking Chips in 30 second intervals, stirring in between, until fully melted and incorporated. Cover and place in the refrigerator until it is mostly chilled and thickened, about 20 min.
- To assemble the sundaes, place 2 scoops of ice cream for a small serving or 4 scoops for a large serving into a bowl. Repeat with the other servings. Spoon an even portion of the blueberry sauce, followed by the chocolate sauce onto each serving of ice cream. Top with an even amount of crumble, blueberries, and Bake Believe® Milk Baking Chips.
