Blueberry Almond-Chocolate Crumble

Ingredients: For the filling:

  • 2-pints blueberries
  • ¼ cup Swerve granulated
  • 2 teaspoons cornstarch
  • ½ teaspoon almond extract
  • ¼ teaspoon cinnamon

For the crumble

  • ½ cup Bake Believe® Dark Chocolate Chips
  • ½ cup coconut flour
  • ½ cup oatmeal
  • ½ cup slivered almonds
  • ¼ cup Swerve granulated
  • ½ cup unsalted butter, cut into ½-inch pieces

Instructions: For the filling:

  1. Preheat oven to 350F. Stir together blueberries, Swerve, cornstarch, almond extract, and cinnamon. Transfer to a 9×9-inch baking dish and set aside.

For the crumble:

  1. Combine coconut flour, oatmeal, almonds, and Swerve in a large bowl. Stir to combine. Add butter, then using a pastry cutter or your fingertips, cut or press butter into the mixture. Continue this process util it resembles a coarse meal. Stir in chocolate chips.
  2. Transfer crumble to the top of the filling in an even layer. Bake for 30 to 35 minutes or until juices are bubbling and top is golden.
  3. Let cobbler rest for at least 30 minutes before serving and enjoy.
