Banana Apple Cake

Ingredients: For the cake
- 2 cups almond flour
- 1 cup old fashioned oats
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 2 cups granny smith apples, cut into ½ -inch pieces
- 1/3 cup (no sugar added) apple sauce
- 2 ripe bananas, mashed
- 1/3 cup honey
- 1 egg
- 1 teaspoon vanilla
For the ganache
- 1 cup Bake Believe® Milk Baking Chips
- ½ cup heavy cream
Instructions:
- Preheat oven to 350F. Line a 9-inch cake pan with parchment paper or spray with non-stick spray; set aside.
- Mix almond flour, oats, cinnamon and baking soda in a large bowl and set aside.
- In a separate bowl, mix cut apples, apple sauce, mashed bananas, honey, egg and vanilla. Pour the dry ingredients on top, then continue mixing by hand until combined and a thick batter has formed.
- Transfer batter to prepared cake pan and bake for 30 to 35 minutes or until golden and set. Remove from oven and let cool for 30 minutes.
- While the cake is cooling, prepare the ganache topping. Place Bake Believe® Milk Baking Chips and heavy cream in a microwave safe bowl. Heat on low power, stirring every 15 to 30 seconds until melted. Continue stirring the mixture until fully combined a thick chocolate ganache has formed.
- Transfer cooled cake to a cake plate. Add chocolate ganache on top and spread with a spatula. Transfer to refrigerator, loosely covered until ready to serve.
