Banana Apple Cake

Ingredients: For the cake

  • 2 cups almond flour
  • 1 cup old fashioned oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 2 cups granny smith apples, cut into ½ -inch pieces
  • 1/3 cup (no sugar added) apple sauce
  • 2 ripe bananas, mashed
  • 1/3 cup honey
  • 1 egg
  • 1 teaspoon vanilla

For the ganache

  • 1 cup Bake Believe® Milk Baking Chips
  • ½ cup heavy cream

Instructions:

  1. Preheat oven to 350F. Line a 9-inch cake pan with parchment paper or spray with non-stick spray; set aside.
  2. Mix almond flour, oats, cinnamon and baking soda in a large bowl and set aside.
  3. In a separate bowl, mix cut apples, apple sauce, mashed bananas, honey, egg and vanilla. Pour the dry ingredients on top, then continue mixing by hand until combined and a thick batter has formed.
  4. Transfer batter to prepared cake pan and bake for 30 to 35 minutes or until golden and set. Remove from oven and let cool for 30 minutes.
  5. While the cake is cooling, prepare the ganache topping. Place Bake Believe® Milk Baking Chips and heavy cream in a microwave safe bowl. Heat on low power, stirring every 15 to 30 seconds until melted. Continue stirring the mixture until fully combined a thick chocolate ganache has formed.
  6. Transfer cooled cake to a cake plate. Add chocolate ganache on top and spread with a spatula. Transfer to refrigerator, loosely covered until ready to serve.
