Bacon Chocolate Chip Cookies

Ingredients:
- ¾ cup Bake Believe ® Semi-Sweet Baking Chips
- 1 ½ cups almond flour
- ½ teaspoon baking powder
- ½ teaspoon xanthan gum
- ¼ teaspoon salt
- ¾ cup firmly packed Brown Swerve
- 3 Slices of cooked bacon (chopped. Reserve some for topping)
- 1 egg
- 1 stick of melted unsalted butter
- 1 teaspoon of vanilla
Instructions:
- Preheat oven to 350°F and line a cookie sheet with parchment paper.
- Cook the bacon just until before it gets crispy and chop into small pieces when it cools
- Except for some of the chopped bacon reserved for topping, add all the ingredients into a large bowl.
- Mix until thickened and divide into 12 balls.
- Flatten the balls on the cookie sheet.
- Top with remaining chopped bacon.
- Bake for 13 minutes.
- Allow to cool and enjoy right away or store in an airtight container for up to 3 days in the fridge.
