Butter Pecan Brownies

Yield: 12 brownies

Ingredients:

For the buttered pecans

  • 4 tablespoons salted butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 ½ cups chopped pecans

For the brownies

Instructions:

  1. Preheat the oven to 350°F. Line a 9-inch x 9-inch baking pan with parchment paper.
  2. Melt the butter in a small skillet. Add maple syrup, vanilla and pecans. Stir over medium-low heat until mixture comes to a boil. Once it boils, continue cooking, stirring constantly for 2 minutes. Remove from heat and set aside.
  3. Place chocolate chips, Monkfruit sweetener and butter in a large bowl and microwave in 30-second intervals, stirring in between, just until melted.
  4. Add the eggs and vanilla to the mixture and mix until fully incorporated.
  5. Combine almond flour and baking powder.  Pour into the chocolate mixture and stir until combined and smooth. Stir in pecans and all remaining juices from the skillet. Pour the brownie batter into the prepared baking pan, then spread to evenly distribute.
  6. Bake the brownies for 20 to 25 minutes or until just set. Remove from oven and set aside to cool. Remove from pan and cut to serve. Store in an airtight container.
