Bake Believe’s White Mousse with Berries (Paleo/Keto Friendly)

- ½ cup heavy whipping cream
- ½ cup Bake Believe® White Baking Chips
- ½ cup mascarpone
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- ¼ cup fresh berries
- In a double boiler, melt the white baking chips. Alternatively, microwave in 30-second increments, stirring in between, until melted.
- In a large mixing bowl with an electric mixer, beat heavy whipping cream on high 2-3 minutes until stiff peaks form. Set aside.
- In a separate large mixing bowl with an electric mixer, beat mascarpone on medium for 1 minute, until fluffy. Add melted white baking chips, vanilla extract, and salt. Continue to beat 1 minute, until combined.
- Add mascarpone mixture to whipped cream and beat on low for 30 seconds, until just combined.
- Divide mousse between 2 cups. Top with fresh berries and enjoy.
