Bake Believe’s White Mousse with Berries (Paleo/Keto Friendly)

  • ½ cup heavy whipping cream
  • ½ cup Bake Believe® White Baking Chips
  • ½ cup mascarpone
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup fresh berries


  1. In a double boiler, melt the white baking chips. Alternatively, microwave in 30-second increments, stirring in between, until melted.
  2. In a large mixing bowl with an electric mixer, beat heavy whipping cream on high 2-3 minutes until stiff peaks form. Set aside.
  3. In a separate large mixing bowl with an electric mixer, beat mascarpone on medium for 1 minute, until fluffy. Add melted white baking chips, vanilla extract, and salt. Continue to beat 1 minute, until combined.
  4. Add mascarpone mixture to whipped cream and beat on low for 30 seconds, until just combined.
  5. Divide mousse between 2 cups. Top with fresh berries and enjoy.
