White Chip Mocha Frappe

White Chocolate Mocha Frappe

For the White Chocolate Sauce:

For the Frappe:

  • 1 ½ teaspoons instant coffee
  • ⅓ cup heavy cream
  • ⅓ cup unsweetened almond milk
  • 1 tablespoon Swerve, or more as desired
  • 1 ½ cups ice
  • ¼ teaspoon xanthan gum

Instructions:

  1. Combine all of the ingredients for the White Chocolate Sauce in a large heat-proof bowl.
  2. Microwave in 30-second intervals, stirring in between, until melted.
  3. This sauce will make several servings.  You can set it aside to cool 10 minutes or transfer to a container with a lid and store in the refrigerator.
  4. In the meantime, place a large bowl in the refrigerator to chill for 5 minutes.
  5. In the chilled bowl, combine the ¼ cup heavy cream, 1 tablespoon Confectioners Swerve, and ½ teaspoon vanilla.
  6. Beat the cream mixture with an electric mixer until medium peaks form.
  7. To make a frappe, combine 2 tablespoons of the White Chocolate Sauce with the instant coffee, ⅓ cup heavy cream, ⅓ cup almond milk, 1 tablespoon Swerve, and 1 ½ cups ice.
  8. Turn the blender on and sprinkle in the xanthan gum with the blender running.
  9. Continue blending until you achieve your desired frappe consistency, about 30 seconds.
